a selection of tsukemono or japanese style pickles: chayote cucumber mirin pickle, morado daikon pickle, orange pepper furikake daikon peel crisps
encebollado agedashi tofu
lightly coated fried tofu served with a warm fragrant ecuadorian vegetable broth of tomato, peppers, fresh herbs and paprika
peach coconut miso crudo
coconut miso and coriander cream topped with peach, blackberry and radish. finished with rayu, a japanese chilli oil
summer vegetable nori tempura, yuzu aji amarillo
courgette, green bean, sugar snap, long aubergine, enoki and nori in light batter. served with peruvian yellow pepper chilli mayonnaise

a refreshing shot of chilled tamarind-infused miso broth with tofu, topped with spiced popcorn
pineapple yakitori with carretilla cream and panko pangrattato
