a selection of tsukemono or japanese style pickles: chayote cucumber mirin pickle, morado daikon pickle, orange pepper furikake daikon peel crisps

encebollado agedashi tofu

lightly coated fried tofu served with a warm fragrant ecuadorian vegetable broth of tomato, peppers, fresh herbs and paprika

peach coconut miso crudo

coconut miso and coriander cream topped with peach, blackberry and radish. finished with rayu, a japanese chilli oil

summer vegetable nori tempura, yuzu aji amarillo

courgette, green bean, sugar snap, long aubergine, enoki and nori in light batter. served with peruvian yellow pepper chilli mayonnaise

tiradito hiyajiru

a refreshing shot of chilled tamarind-infused miso broth with tofu, topped with spiced popcorn

pineapple yakitori with carretilla cream and panko pangrattato

marinaded pineapple skewer with crunchy paprika breadcrumbs. served with a light potato cream and grated cucumber

avocado charred corn charashi with peptitas

a deconstructed form of sushi with avocado, daikon pickles, charred corn, tofu aji amarillo and umeboshi aioli
