new recipe: kimchi tempeh smash burgers

packed with protein and flavour, these homemade smash patties are a perfect way to get the most out of your tempeh. we use gochujang paste in this recipe but miso paste is fine too. it’s getting really easy to find good store bought kim chi, making this recipe hassle free. 

serves 4 – 5

ingredients for the patty: 
250g tempeh, grated on the large side of a box grater
150g carrots, grated on the large side of a box grater
50g kimchi (chopped)
2 ½ tbsp soya sauce or tamari
1 ½ tsp henderson relish 
½ tsp liquid smoke (optional)
1 tsp gochujang paste
1 tsp garlic powder
70g tapioca flour or starch 
2 tbsp oil
½ tsp salt

ingredients to finish the burgers: 
4 burger buns, sliced in half
2 handfuls shredded lettuce (baby gem or romaine)
4 tbsp kimchi
4 tbsp vegan mayo or chilli mayo 
optional: sliced spring onions, red chillies and picked coriander
 4 slices of vegan cheez slices (optional if you want cheeseburgers. we enjoy the smoked chedder style slices)

method 
• place all the ingredients for the patties in a mixing bowl, and combine everything together with your hands.
• shape the mixture into 4 – 5 round balls
• heat a large frying pan with the oil until very hot. place about 3 to 4 balls in the pan, leaving room for them to be smashed down. after 30 seconds of searing, smash them all the way down, with a large heavy spatula until they are less than 1 cm thick. let them cook for about 2 to 3 minutes, or until the edges start to turn brown. flip them over and cook for 2-3 minutes on the other side. If you want cheeseburgers, put a slice of cheese on top of each patty once you’ve turned them over. cover the pan with a lid and splash a tiny bit of water in the pan, to create steam that will melt the cheese evenly.
• meanwhile, cut the burger buns in half and place under the grill or on the pan until lightly toasted.
• spread the mayo on the bottom half of the buns, then put the lettuce and the smashed burger on top. add kimchi and then the coriander, chillies and spring onions.
• spread more mayo on the remaining halves of the buns and place them on top.
