this year, we’re celebrating the new year with an exclusive six-course nikkei vistosa menu, taking you on a journey of flavours through the fusion of japanese and peruvian flavours.
each course showcases the harmony of these two cultures, bringing bold colours, fresh ingredients, and lively spices to mark the new year.

encebollado agedashi tofu: lightly coated, fried silken tofu served with a warm, fragrant ecuadorian vegetable broth of tomato, peppers, fresh herbs and paprika
burnt hispi cabbage with carrot miso dressing: braised then robata-charred cabbage with heirloom carrot pickles
artichoke pineapple cactus ceviche: chopped salad of roman artichoke, pineapple, pickled cactus, ginger and samphire in a pineapple lime leche de tigre
oyster mushroom anticucho: marinated oyster mushroom skewer with red pepper cream, aji verde and pickled kumquat
sazon amarillo rice side: yellow rice with distinctive annotto-infused seasoning
sesame namelaka, white chocolate matcha anglaise, sesame miso tuille: smooth dark chocolate and sesame mousse in a puddle of matcha custard topped with a crisp toasted sesame miso tuille
yuzu alfajores: cookie sandwich filled with yuzu cream and yuzu chocolate
