along with the arrival of spring, we welcome nikesh to our development kitchen. nikesh brings a fresh perspective along with innovative ideas that perfectly capture the vibrant flavours of spring and summer.

his culinary journey from his time spent living in mumbai is reflected in our new spring menu, featuring his mango alleppey curry and vada pav sliders, two dishes he grew up eating in india.

drawing inspiration from her childhood memories in tuscany, alessandra has also breathed new life into this menu. growing up in italy, one of ale’s favourite meals was a slice of her mother’s lasagna. this inspired her lasagna bianca, a generous slice of pan-finished courgette lasagna served with cherry tomato scarpariello sauce. 

through their diverse culinary backgrounds, sarah, ale, nikesh and cedrick have worked in collaboration to bring you an exciting range of new dishes.
