our aim is to be sustainable however we can, whatever it takes. each of our suppliers are carefully sourced and chosen, making sure that everything we use has the least possible impact on the environment, and the best possible impact on our customers.

here’s a few of the suppliers who help us do just that:

brindisa

one of the first retailers in borough market, this premium spanish food company has been supplying mildreds restaurants for decades. we have always bought chickpeas from brindisa, and will continue to do so for mallow now that they are right on our doorstep in borough market.

club cultured

a small batch organic producer, club-cultured provide our tempeh which they produce without the use of plastic in hackney. read our chat with them at mildreds here.

cleanbean tofu

we’ve been using cleanbean’s organic, small batch organic tofu for the majority of their 15-year story. it’s made in whitechapel, using the best organic ingredients and traditional techniques.

allpress coffee

roasting specialty coffee for over three decades, with a considered coffee range and a focus on consistency and sustainability, the flavour of allpress espresso has become an icon, instantly recognisable in independent cafes around the world.

rare tea

the tea you drink at mallow has been grown supporting the 3 pillars of sustainability: environmental, economic, and social. all teas are grown without pesticides and herbicides, and there are no bags with bleaches, glues and micro-plastics which waste resources for single use. a portion of revenue also goes to the rare charity which supports tea growing communities by providing educational scholarships.

wildfarmed

the sourdough served at mallow is made using regeneratively grown flour sourced from wildfarmed. specialising in sustainable agricultural practices that enhances soil health and biodiversity. collaborating with farmers in uk & france, they are ensuring a fully-traceable supply chain free from pesticides.

masafina

partnering with female owned masafina enables us to bring the vibrant, authentic flavours of mexico to our dishes. They supply us with top-quality fair trade ingredients—mexican chillies and tomatillos—helping us create bold, plant-based dishes packed with personality.

sapling

for every bottle of sapling vodka sold, a tree is planted. one tree can absorb up to 1.5 tonnes of carbon in its lifetime. making a bottle of vodka emits about 2.5kg of carbon, so you could say each bottle of sapling pays back over 535 times. essentially when you drink our vodka based cocktails, you’re helping to plant trees.

honest toil

the extra virgin olive oil used in our dishes at mallow are harvested in kyparissia in Greece where tom & juli cultivate their own small groves and source from local family farms. Using traditional hand-harvesting methods, they ensure quality while supporting the local community. Olives are pressed and the oil packed locally preserving the rich flavour.

belazu

starting with an olives stall in borough market in 1998, belazu now specialises in high-quality mediterranean and middle-eastern ingredients. at mallow our hummus is made with tahini from belazu that comes  comes from mount gerazim near Nablus – the original home of tahini.
